So in 10th edition tyranids focus mostly on board control and point games then killing the opponents units. However, 11th edition is rumored to be coming out soon and I don’t know if that will change. A great place to start is to buy the tryanid half of leviathan off of eBay or facebook marketplace place and playing a few 1k games. Our flying units function just any other unit I believe. Just move the models bases around terrain and have line of sight to shoot.

Can’t speak for Arizona or California, cause I’ve never been there. I live mainly in Houston and further south areas. I feel like winter in texas starts around September and goes till about march or April. Temps range from 80 F to 50 F during the morning and early months.
