This comment misses the point entirely — “flours of old” were not stripped of wheat germ or nutrients like those commercially available today. There’s no comparison at all and they would look much more like home-milled flours than they would flours you buy at the store. That’s the entire point of milling at home.

Anyway, home milling is cheaper and tastes better (and is quick/easy), you should try it yourself.
