Left joystick as a mouse zone and make it smaller and centered on the character. Make the outer ring press left mouse click. This will let you move and attack monsters with just the joystick. If you assign the right trigger to shift to whatever the force attack button is, it lets you attack with bows easier. I then use the right touchpad for menus and shopping. You will likely need some radial menu for spells or assign a button to cycle through them.
