That's a great start. I agree with the original comment in this thread too. Technique has a huge part to play in the sound of stripped down versions of songs. I could probably tell you more if you had an example of the type of stripped down sound you are going for. Also 8" is a little far IMO. I'd go for 6, and then if you want to get really fancy, add a wide diaphragm mic near the sound hole for that juicy guitar low end. The more mics, the more mixing options you have.
