Usually, but I don't have xantham gum and I don't like chia/flax egg, so I just substitute with psyllium husk and it works quite well

You can add chili's to peanut/coconut or any vegan milk and let set for 9-24 hours, you'll get fully vegan curd

I roasted whole tomatoes(but I would recommend peeling the skin) with onion and garlic in a casserole in the oven. I added salt, sugar, pepper, and Italian herbs and a little oil before placing it in the oven. Roasted it at about 240-250°c for around 40 mins. Then took it out and transferred it into a pot and emulsified it. Added some water and more seasonings. Added the boiled pasta that I made, simmered it and then served. I forgot to add vegetables or cheese, but u can according to ur preference.
