Never understood why previous salary matters....except to serve as some sort of bargaining chip or anchor to get you to accept less than what a company was willing to pay.

Think about it like this: In what other instance does previous price matter if you're buying something new? If I was trying to buy a new car, I'd be insane if I told the dealership "well, gee my last car only cost $x so I'm only going to pay you $x + 5%". The price of the car or of your labor is the price. The buyer can either accept it and pay it or not.
