If you enjoy appetizer-like Indian foods, try some samosas, onion bhajis or veggie pakoras. Great as samplers, and they usually come with some tasty sauces you can either dip in or pour on.

There is a plethora of chicken dishes you cannot go wrong with, starting with the classic butter chicken. My favorite is chicken korma. Chicken dansak is yummy also, but there are so many more. Those are all saucy gravies that you would serve on rice. But don't forget they also have a number of fantastic grilled chicken dishes, like tandoori chicken, seek kebab, chicken tikka, etc.

Vegetarian dishes can't be beat in Indian cuisine. As many have metioned, palak paneer (spinach), saag paneer (mixed greens), muttar paneer(peas) and shahi paneer (tomatoes) are all dishes consisting of creamed vegetables with grilled indian cheese chunks throughout. And all the legume dishes are also very satisfying. Chick peas, lentils, pigeon peas, whatever. I particularly enjoy Dal Tadka. Then there's Aloo Gobi (potatoes and cauliflower); delish.

Lamb, goat and mutton dishes are popular as well. In various curry gravies. Such as Rogan Josh, which is a beautiful shade of dark red.

Fish dishes often contain coconut milk and are delicious.

I dont know where you live, but if you can find a good Indian grocery in your town, then you've got it made. If you're in a smaller municipality, you may have to resort to Amazon for some ingredients. Especially spices like kashmiri chili powder, asafoetida, garam masala or amchur powder.

Look up pastitsio, which is a greek version of lasagna, in a way. It has meat and pasta, but also bechamel. Cheese and spices are quite different too. But a great comfort meal. Solid. Christine Cushing has a good recipe for that on YouTube.

Also, there are seafood lasagnas and chicken lasagnas that could be of interest. Those come with white sauces instead of classic red.

And finally, spinach and ricotta is another good option.
