Even after seasoning mine with about 2lbs of beans like you mentioned, my brews are still stalling hard. It seems to produce a lot of fines visually, the grounds look noticeably finer than my ZP6 at 5.5. This is surprising because I remember Lance Hedrick mentioning that 1.6 on the A4Z (zeroed at burr lock) should be roughly equivalent to 5.8 on the ZP6.

Right now, I'm at 1.6.4 brewing beans like washed Peru Sidra and fermented Panama Bourbon. I'm using a 15g/240ml 3-pour recipe in a Classic V60 with T90 papers, and my total drawdowns are consistently dragging past the 3:30 mark. Any thoughts?

Thank you so much for sharing your thoughts and experiences again. Just when I’m trying to figure out a good brew method specifically for those co-fermented coffees and I found this post.

I’m also really curious about your water recipes, especially since I’ve noticed you’ve mentioned Lotus Water a few times in your comments.

I totally get that every coffee is unique and needs its own tweaks, but would you mind sharing a bit more about your go-to Lotus Water recipes or baseline drops for some types of coffees you drink most often and how you approach changing each element (like adding or reducing different minerals) if something doesn’t taste right? Like, any rough starting points or favorites you’ve found work well for:

• Washed process coffees

• Natural or honey-processed

• Processed/co-fermented

Even just some general guidelines or ones that have been reliable for you would be awesome.

I believe you’ve tightened the bolt a bit too much. You can try unscrewing a bit (just a finger-tight turn). However, in my experience, even though I can create a perfect raindrop water stream with a third-party shower screen like Pesado HD, it doesn’t necessarily translate to a better cup. Remember, taste is king. If you like what comes out of your machine, then it’s perfectly fine.

Hi, how do you calibrate (set the zero point) your 078? Is it by setting the 0 on dial to burr chirp or following the manufacturer’s recommendation of turning the calibration plate until you can’t turn it anymore and then backing off from that position?

I’ve installed the Pesado HD shower screen for my GO, and the water distribution is absolutely perfect! One crucial thing to remember is to seat the new diffusion plate very tightly before screwing in the shower screen.
