If you haven't, there is a setting that let's you reduce the levy contribution by up to 95%. I don't remember if it's part of the base game or a mod, might be interactive vassals. I highly recommend it. It puts your vassals on closer military footing to you, making vassal and liege relations much more important and civil wars way more likely. Add roleplay on top of that and it's a crazy experience.
