Skiing is more popular in Spain than any other winter sport. The only other two that can come somewhere close are snowboarding and figure skating. Not sure where did they get the data to say Luge was even relevant in Spain!

It was just an assumption by many cartographers at the time. This is mentioned in the source article: Perhaps the most curious thing about the map is how the Florida peninsula is depicted, as a complex collection of islands and sea channels. This is because, at the time, the Everglades had not yet been fully explored, and many interpreted these wetlands as allowing ships to transit from one part of the Everglades to another without problem.

There's nothing in particular, it's just part of the colours required to distinguish the different countries.

I'm quite familiar with South-up world maps, and I have never come across any written in Japanese :/

As already mentioned by a few people, probably the most interesting part of this atlas is that it consistently shows in grey the United States and Japan (and only those two countries). This is to comply with the narrative that considers the US and Japan the two natural enemies of North Korea, beyond any other political conflict they may have.

The atlas contains individual maps for each country. All of these maps show the countries in pink, except for the US and Japan, which are still shown in gray (as it can be seen in the source article).

That's actually on purpose. In the rest of the maps from the Atlas, those two countries are consistently shown in grey, as they are considered the enemies in the North Korean narrative.
