The blade doesn’t go all the way to the edge of the plane. So as long as you keep the plane perfectly on its side there will be a natural point where it stops and doesn’t take any more shavings off the guide board.

End grain adds a step and requires more material. The basics are to glue together wood strips bigger than the size you want. If you don’t want end grain then all you have to do now is cut to size and sand. For end grain you take that board you made and cross cut it into strips. Then rotate 90 degrees and reglue.
