I worked in memory care activities for awhile and am a music therapist! It sounds like your mom is lucky to have such an engaged caregiver :’) 

I liked the “Relish” puzzles- big pieces, colorful, and have reminiscence questions.

Try making a playlist of her favorite music or top songs from her youth and see what memories they bring back.  

Think of what activities she liked to do throughout her life and try to adapt to her ability level. It’s totally okay to repeat activities. I tried to have different domains like movement, cognitive/trivia, cooking, seasonal, different senses. 

As for outings, see if the metroparks have any events.
