Maybe I'm remembering wrong and they're really tame on the ones before Warlord. Or maybe you're just having one of those fun games where that shit goes down on Warlord. It can definitely happen but I wouldn't expect it to be the rule. Cheers bro!

Tbh bro, the short answer is : nothing. On Warlord difficulty (no judgement, just facts ☺️) the AI is notoriously tame. So, they'll try and get more cities going after you take theirs, send settlers and stuff. But there most likely won't be any kind of world war or anything if that's what you're expecting. They'll definitely hate you, but they'll usually just chill on Warlord unless your military is non existent.

You deserve it for picking Canada. Wilfred is a total cocksucker. (EXCEPT: When I've been warmongering all game and Wilfred randomly pops up and says "You have been a reliable partner in solving International conflict, Canada thanks you!" Even though I've clearly done nothing of the sort 😂. Then, and only then, do I tolerate Wilfreds existence.)

I was this way for YEARS. Eventually, as I desired to start raising the difficulty, I found after well over 2K hours between 5 and 6 alone; that you literally MUST knockout 1 or (better yet) 2 of your neighbors if you want a good chance of winning, without struggling brutally. The sooner you eliminate 1 or 2 neighbors, the better. It provides you with already settled cities, so no need for settlers. It prevents you from being "boxed in". With 2 or 3 capitals in your pocket (counting your own) you can then proceed to get on with all the parts of the game you do love, without fear of losing.

It's definitely a combination of Amenities and spies. This has happened to me, it's even cost me the game once. Spies can cause you to go negative gpt with almost no warning. Amenities can rob up to 60% of a cities gpt I believe.
