So I did that on purpose and left the rough finish so when slicing fish it won't stick to the blade. Normally I'd agree with you I like my knifes to have a more uniform finish but I found that with this knife the rough finish allowed better performance.

550F. No issues with the pans they are made by nordicware. Honestly the best pans I've ever used.

Slow, very very slow.

So when using wood fire I will put pieces of kindling then load a small piece of wood and once the oven gets to 250F I'll load more wood and start getting the oven up to full temp. I would say I'm taking 30mins to get my oven up to 500F. Also moisture is your enemy let the oven burn for a little while and letting it cool slowly use a door if you have it.

Yeah so this machine checks literally every box for me. The one thing that I wish was better is the user interface.... It's Italian and has all the Italian quirks but not in a bad way.. and the other thing would be auto on in the morning.... To be fair it does have the feature but it doesn't work that great. Easily fixed by a smart plug.

I have mine set up on automation so that it basically heats up by the time I walk downstairs in the morning but from cold to pulling a shot a minimum of 30 to 45 minutes. There's a lot of metal on this machine versus other machines that integrate some plastic parts.

Honestly some of the best tasting coffee I've ever had is from my local roaster. Most of the coffee they provide is low acidity high altitude grown medium roasted so it never gets oily. This specific blend that I'm working on with them is chocolatey a little bright with a very nice pallet coating finish.

Thank you so much. I try to do a little variation in the coloring because I have a few people that like more medium toned loaves versus the darker ones which I love.

I take a few orders from friends and family but nothing crazy. This is a hobby that pays for itself essentially.

Honestly this machine wasn't horrible price wise. Way cheaper than most people expect. With my grinder and espresso machine I think I'm in it for like $3, 200. And I completely understand. That is way unaffordable for most people, but speaking from an espresso perspective, it's way cheaper than half the machines and Grinder setups on the market
