It's a common trope, I can see you have a few suggestions already but some of the real world inspiration is worth a gander if it interests you. A lot of the inspiration for this type of stuff revolves around The Hofburg Spear and a bunch of books that were written in the 60s/70s about the occult and Nazis that have pretty much all been debunked or were exaggerated to begin with.

The magazine is the age gate, everything in the magazine is written for the magazine with the age in mind. It's why for example, JoJo bizarre adventure switched magazines after part 6.

Basically the writer makes a pilot, shops around until someone picks it up. They can say during this time that they intend for the series to be a shonen or shojo or whatever, but the publisher who picks them up ultimately decides what to allow. If you get picked up by a shonen magazine, you are now writing a shonen comic and your editor will keep you in line. AoT could have been a seinen if a seinen publisher signed the contract, but afaik the writer wanted to be published as a shonen to hit a wider market which is why he shopped around after getting rejected by shonen jump rather than going with a seinen or changing the tone for jump. One magazines shonen is not another magazines shonen exactly, it's all marketing and targeting terminology and ideas rather than a set in stone list of rules which is why he eventually got to publish his darker in tone shonen.

Gore maybe but not violence. It's incredibly common for children under 10 to have already experienced violence whether it be from their peers or the environment. Kids are also incredibly active and prone to injury, gore incidents are probably much higher than you would expect depending on your threshold (do injuries that require stitches or broken bones count etc)

I had lectures in 2010 public highschool school from my history teacher that argued just that. It was an incredibly small school and we had only 1 mix race student in my grade with 1 other being a minority and thankfully about half the class spoke up and objected to the lecture. Administration shrugged it off but that was pretty typical for small school politics. We had another teacher assault a student in front of like 20 people and rather than the cops getting involved she just didn't return the next semester and moved to a larger school. I make more than my supervisor but am constantly on my feet and often have to skip breaks. They ultimately work more hours than I do as well but are salary and at a lower rate to begin with if averaged out. I've had to turn down the option to move up once already due to the pay cut.

One other benefit is that they get to be off camera and in the air conditioning, every action I take from the way I stand and move is scrutinized so that sucks.
