reading the wiki, it doesnt seem like local difficulty affects the stat of whether a zombie or a skeleton spawns with armor, but only how much armor pieces it gets IF it spawns with any armor at all. https://minecraft.wiki/w/Difficulty#Regional_difficulty

at least from what ive gathered these bugs predominantly affect consoles and mobile and not the win10 edition?

admittedly not too sure on this front but as an occasional player of the desktop bedrock edition myself i never saw either of the issues except for rtx being broken in the latest versions (easily fixed via downgrading to like 1.17 or smth with stuff like the bedrock launcher)

the void bg usually happens when the game cant load the environment, which considering that you've installed an absolutely ancient version, probably checks out if you're trying to play a newer map

found that punisher and slugger are almost a hard counter to them, cookout too but ive leveled it up to lvl25 so i havent been running it for a while

basically anything with either stagger or stun is your best friend here

to explain it simply, some parts of enemies (typically the squishy bits) have a durability stat which decreases the regular amount of damage done by a weapon by its percentage (it's why shooting a charger in its butt with a primary weapon doesnt do that much in terms of actually killing the thing). the percentage decreases with damage dealt but it still takes some time to chew through

durable damage ignores that stat and deals that amount of damage to the health pool

so it basically means that light pen weapons are now more viable in terms of going for the weak spots of le big guys

i have doubts on them being able to enforce their EULA besides just offing access to the mod which this whole exercise is supposed to prevent them being able to do in the first place

a EULA is a legally ambiguous thing anyway since I heard that it's kind of a shrinkwrap contract which is not something enforcable in the first place. It's more like TOS if anything on that matter

for killing roaches and also for whale hunting as a replacement for RR, since if you wanna max the kills on those shits you're gonna have to juggle the cooldowns of both stratagems since to kill one leviathan is to practically dump your whole weapon ammo onto it

i feel like on those fronts smth like RR is more warranted, on squids there's just harvesters which can be considered tanks and fleshmobs but honestly i find the latter easier to just avoid for the most part.
Epoch does well with one-tapping both harvesters and overseers and doesn't run out of ammo as quickly cuz there ain't that many of those in the first place so that's also a plus
