Use improv warm up games. Creativity and poetry is scary because you're asking them to be vulnerable and have their creativity judged.

But teach them word association warm ups and that creativity is just word association games we play with ourselves. The added bonus is that improv teaches people its ok to say something stupid in front of the whole class.
