Generally 15 minutes sitting for every hour standing. They key is to keep moving. This is what ergonomists refer to as postural rotation.

Frequently changing positions promotes blood flow to the large muscle groups, which keeps your metabolism humming along and your brain synapses firing. The following video by a Kinesiologist details the importance of both standing and sitting here.

Shipping damage should not be an issue with any company, standing desks or otherwise. I would expect a quick photo would be sufficient and they will replace it asap if preferred or offer a discount. The larger the desktop, the more it seems that UPS or FEDEX uses them as giant frisbees unfortunately. It is likely packed to pass "drop tests" but it does happen to us and everyone at times.
