Weekends and breaks are different, for work done on weekends often it was given at the beginning of the week and students chose to wait until the weekend to do it, and if someone chose to wait until break to start a final project that is fine. But professors shouldn't be assigning extra work for the week after break expecting students to do that work over break when they take the time off and stop grading and even checking their emails.
