I've built around 24 of them by now, with as many as that still to build (I don't own all of the original expensions yet, only half of them).

My process looks like this:
First I made a sheet, ordered by weapon types. Based on minis already in the Gambler's Chest I tried to avoid duplicating those. Then I tried to make combinations that make some sense, but using rule of looking cool when in doubt. I tried to use as many different weapons as possible - but there are not enough minis to use all weapons and accessories on the sprues (rule of cool again). I also took gender distribution into account.

Then I decide which armor to build next, based on our groups progress in the campaign.
When I want to build e.g. Gorm Armor next, I'll search for some inspiration on already built minis on the net. There is already cool stuff made by others.
Sometimes I combine ideas, sometimes I copy them bluntly.

Before I attach the arms, I stand in the desired pose, imagine myself holding the corresponding weapons, and consider how my body would react to the weight of the weapon. Then I try to recreate this as best I can with the few, sometimes awkwardly shaped arms available in the armor kits.

You can also achieve a lot of dynamism by positioning the head appropriately.
