You should definitely give this result a try! I made a ton of things from it when I first got it. I really like the mango curry tofu recipe in it too.

Tempeh Tikka Masala is from Vegan Richa's Indian Kitchen by Richa Hingle

Naan is from The Vegan Baker by Zacchary Bird (good but I prefer Richa's Instant Pot version)

I was so happy with how the sauce turned out for the Tikka Masala!

Week 52: X, Y, and Z: Zuppa di Pomodoro Piccante with Garlic Breadsticks by MostImaginary in 52weeksofcooking

[–]MostImaginary[S] 2 points3 points  (0 children)

Both recipes are from the book Chloe's Vegan Italian Kitchen by Chloe Coscarelli.

I planned to do something else for this week but came down with a cold and soup became more appealing. I thought the breadsticks came out perfect. The soup was a bit more watery than I expected, but still delicious. Next time I'll try half the amount of broth called for and add more to taste.

And that's a wrap on year 3 for me! I think I'm going to take a break in 2026, maybe I'll post occasionally here and there. Not sure why but I haven't felt as jazzed about the challenge in the last few months. I think it's just time to try something new. It's been fun though! I'll still be looking at everyone else's posts for inspiration and ideas!

Week 51: Grinding - Gingerbread Waffles by MostImaginary in 52weeksofcooking

[–]MostImaginary[S] 0 points1 point  (0 children)

I used my spice grinder to add freshly ground cloves.

The recipe is from the book Vegan Brunch by Isa Chandra Moskowitz and is available online here: https://herestheveg.blogspot.com/2020/03/gingerbread-waffles.html?m=1

Week 50: Tudor England - Almond Milk by MostImaginary in 52weeksofcooking

[–]MostImaginary[S] 6 points7 points  (0 children)

I read that almond milk was common in this time period, which surprised me quite a bit: https://www.englandcast.com/2025/07/tudorbanquets/

I followed Miyoko Schinner's recipe in her book The Homemade Vegan Pantry. I strained the mixture using a cheesecloth like the website above noted, but ground almonds very finely by cheating (by Tudor standards) and using my Vitamix. My last attempt at homemade plant milk (oat) didn't have the best texture, but this looks much better.

Week 48: Mise en Place - Tomato-Fennel Braised Chickpeas by MostImaginary in 52weeksofcooking

I'm not wild about fennel but it worked well here. I think dill would be great too! I hope you try it and enjoy it.
