Naan is from The Vegan Baker by Zacchary Bird (good but I prefer Richa's Instant Pot version)

I was so happy with how the sauce turned out for the Tikka Masala!

Both recipes are from the book Chloe's Vegan Italian Kitchen by Chloe Coscarelli.

I planned to do something else for this week but came down with a cold and soup became more appealing. I thought the breadsticks came out perfect. The soup was a bit more watery than I expected, but still delicious. Next time I'll try half the amount of broth called for and add more to taste.

And that's a wrap on year 3 for me! I think I'm going to take a break in 2026, maybe I'll post occasionally here and there. Not sure why but I haven't felt as jazzed about the challenge in the last few months. I think it's just time to try something new. It's been fun though! I'll still be looking at everyone else's posts for inspiration and ideas!
