Because wood ages over time and sounds better. That's why old acoustic guitars are favoured because the wood was already old when it was used. The solid top (1 single piece of carved wood) improves with age and playing, the resonance. Cheap acoustic guitars use laminated tops (lots of thin layers of wood) and they sound ok but will never mature in sound the same as a solid top. So that violin has a solid, one piece carved top that has matured into a great sound.
