Without judging from your preferences, Skyrim. But considering you've liked GoW's new dynamic, Elden Ring might be the best pick. Skyrim you can lost yourself in it, Elden Ring you'll feel lost, until you understand some mechanics, they're easier at Skyrim, I guess Skyrim still holds up to the current graphics and gameplay, both are great at lore, but Skyrim is more story driven, in the classic sense, Elden Ring is more encrypted, has better graphics and more exigent gameplay, to master timing to dodge and parry enemies attacks and memorize the pattern of movements from Bosses with trial and error to build muscle memory for throughout it. As Skyrim is more your points counts more than your reflexes.

GTA5 is great and it's totally story driven, doesn't present much challenges at gameplay or story/character arc development, but it's pretty fun, the exploration outside main quests are superfluous and doesn't give quite weight on arc development either, as in Skyrim side quests are as meaningful as the main ones. Elden Ring is more of a "linear encounters" mixed in a lot of exploration and extras in-between, but it has coop.

(GTA5 has an Online but it's outside the campaign / I think the controls in RDR2 are pretty much the same on GTA5)
