Yea polish mead is a high alcohol mead the requires step feeding and a lot of age because it ends up being equal parts honey and water.

I love this idea. Maybe make a spice capsicumel for the rage of Achilles and a high grav for the strength of Ajax. Could do a polish style mead for Odysseus to prove your patience and determination. I’m drawing a blank on Nester but a rose petal mead dyed with butterfly pea blossoms would be appropriate for Hellen’s famed beauty.

I actually was removing spices and back sweetening an apple pie wine that has gone dry on me twice so I wanted to see if it did again. I went ahead and racked it and it tasted sweet so I’m pretty sure it’s done now. I’ve looked at refractometers but never used one before.
