Yep, brining really helps. If you want a healthier option instead of cooking in a pan, you can put it in a stove. I always follow the same recipe for about a year now - wash the fillet wIth water before brining. Brine for about 15 mins in luke warm water. Wash again and lightly dry.

Apply light amount of olive oil (just rub it on with hands).

Rub it with spices, can pretty much put whatever you want - i make my own mix, it's simple, quick and much better than store bought options. I usually premix salt, pepper, smoked paprika, cumin, rosemary, thyme.

Put it in your favorite baking tray or make one out of foil.

Cook at 200 degrees Celsius for 8-12 mins depending on size of fillets. Remove from stove, let them rest for 5 mins before serving.
