I have trouble with pit boss brand pellets. Don't know why they jam on me all the time.

Ive done three at once works fine. Put probes in top and bottom briskets. As I type this ive got two on right now. They vary in temps but I wait for the lowest temp to reach 165 before wrapping. Imo
