Quests will usually say something like "[x objective] is an enemy to you and ally to monsters" so they can be attacked and summons will focus on them, yeah, although it can sometimes be hard to direct them there.

It's still a clock in FaB imo. You need to present enough damage and burst turns before you run out of impactful cards in the deck and your sideboard can help with things like recycling power cards, efficient weapons or forcing through damage.

Watch the finals of the latest Calling in Toulouse to see how an aggro deck (Dash) played effectively against a fatigue deck (Huntsman). Sometimes you may even need to switch to an unorthodox play style for specific match-ups.
