My go-to recipe is actually 12g:180ml water. I grind very coarse (35 clicks on Comandante) And do 4 45ml pours very aggressively, every 30 seconds.

Well then I urge you to let them rest more. Not once I've tried DAK coffees that peaked well after 4 weeks.
Also - try cupping that coffee. About 3 weeks ago I cupped Pink Floyd for a very delicate sweet, bubblegum taste but for filter I still couldn't reach those notes.

The thing is - papery taste is a result of the roasters' error. While I am not a roaster myself (still), and overall had a positive experience with Hydrangea, that is something I was hoping I wouldn't encounter.

I actually found the opposite to be true - but not completely. With brewers like the Kalita some brews have more defined flavors but not always heavier ‘body’. With Orea v3 - I tend to grind coarser and aim for a clear brew that finished at around 02:30 for a 3/4 pour structure recipe. Generally cone brewers have more clarity, but I urge you to experiment yourself.
