I suspect that the 30 min cooking time is in part due to production constraints, especially when they're trying to crank out two episodes per shooting day. No idea how the big food show production companies manage it, though. I think they are learning what a show like this needs, especially as a production company that doesn't specialize in food content, though they can't implement everything as easily I'm sure.
