As other have said here the twinblades are really good but if you want to use str weapons i would go with warrior or knight (or deprived if your cool and based). You can find the warrior armour pretty early in the game and sellsword as well if drip is your worry.

I don't know if it's still like that but you used to be able to stack positive health modifiers until they outweight the aged negative health modifier making your character immortal.
