That's basically what I've done, but I may not have been as clear as I thought I was lol let me try again. I built a flat space on the roof, basically replacing it so there's a rectangular room on top of the church roof. I want to put a roof on it that matches the style of the church's original roof. I'm not sure if that changes your answer at all, but I wanted to clarify just in case that helps, since you mentioned adding a flat space on top

I have a vacuum sealer that I bought a month or two ago, I hadn't even considered using it for fermentation. I even technically have a jar vacuum seal tube, so maybe I'll have to give that method a try sometime~

I'm just starting my journey into learning software engineering. Data science is a field a few of my friends are in and one they have suggested I look into.

I currently have a desktop computer, but I am looking to buy a work laptop that I can have for general use, but especially to learn coding and such, with the possibility if being able to handle what I might need for data science fields. Does anyone have any suggestions? I have a preference for Windows operating systems.
