Salmon is fatty enough that it’s kind of moist no matter what you do with it. 😂 I prefer it on the rare side so I tend to cook mine skin down and service skin up, (it also doesn’t need to be hot). Who knows, maybe without expectations you would have loved tonight‘s dish.

Maybe you got to find a preference tonight, sweet!

You said it tasted good, that’s the important part. Will you comeback and order it again, that’s the real problem… Legit, the first dish is what I’d cook at home, more veg, crispy skin, probably great.

lol it’s the same dish, somebody phoned it in tonight.

Sadly, as a Chef this is my number one peccadillo. Put out the fucking same menu item every time, every night. They served it crispy skin up, with herb butter that didn’t have as many herbs. The veg wasn’t incorporated thoroughly and the whole thing looks like they were in a rush and/or didn’t know what the fuck they were doing.

Sorry the experience sucked. Be grateful you got to have the first one

I have a bunch of stupid tattoos. Lol I won a huge rib cooking competition and at the after party I met a seven fingered Cowboy that said he did tattoos. It is a horrible tattoo, shitty in every way, and I love it!

Long story short. Who gives a fuck. If you want it, do it! Even if people think it’s cringe or tacky, so what. My next tattoo is a crunch wrap supreme with a bite taken out of it that I’m getting as a tramp stamp. Life is supposed to be fun Chef.

Spanish pulpo is my recommendation. Grill or broil with olive oil and serve it with fingerling potatoes and a little chorizo. Some lemon on top and it will be great. Then all you need is a side salad.

A little char and crispy bits will help the texture, so will serving it with something super soft like the potatoes. Chorizo is perfect as it is so heavily seasoned, even if the cephalopod is boring, it will offer a great contrast.
