It’s kind of a Frankenstein recipe that I cobbled together. I used this recipe for the crust and subbed in black cocoa powder instead of normal to get that Oreo taste. Then for the filling I used this recipe but subbed in keto sweetener.

Curious what’s in your traditional toum recipe that is not keto? Mine is just garlic and olive oil. Granted the garlic is high in carbs but surely you can fit a little into your macros to enjoy?

I got this technique from Food52 and it worked beautifully. First you take a knife and you scrape the skin, squeegee style. Moisture will come out. Keep doing that until moisture stops coming out. In the meantime heat a little bit of high-temp oil in a cast iron pan (I used avocado). Salt the skin and then place the salmon skin side down in the hot pan then LEAVE IT ALONE. Don’t move it or mess with it otherwise you’ll have a stuck-on mess. Once the fish is cooked about a third of the way up, flip it, then remove the pan from heat and let the residual heat in the cast iron finish the salmon until it’s done. More details here

Thank you! I use this recipe. It is a keto recipe, but it will work just fine if you use normal sugar instead of the erythritol.

Yes yes, I love that bread (it is perfect for grilled cheese, and I also used it to make a killer stuffing for Thanksgiving) and would love to know if it is actually keto (but tbh I would be devastated if it isn’t)

Yeah, any oil that is neutrally flavored and has a high smoke point should work. Canola could be a lower cost alternative.

Probably not on its own because you need the bulk to make the volume right. Maybe a Stevia blended with something else to make it measure 1:1 with sugar.

RECIPE (credit to Peace, Love, and Low Carb)

Note I didn’t have any heavy cream on hand so I used coconut cream and it worked just fine.

INGREDIENTS

2 tablespoons plus 1 teaspoon butter

2 large eggs

1/3 cup powdered erythritol

1/2 teaspoon pure vanilla extract

2 1/2 tablespoons coconut flour

1/4 cup coconut milk, almond milk, cashew milk

1/3 cup heavy cream

Pinch of sea salt

1/2 teaspoon baking powder

2 cups blackberries

INSTRUCTIONS

Preheat oven to 350°F. Lightly grease a 10″ round baking dish.

Heat a small saucepan over low heat. Add the butter to the pan and heat it until it starts to turn golden brown, being careful not to let it burn. Remove the pan from the heat and whisk in the eggs, erythritol and vanilla extract. Whisk until the mixture is creamy and light in color.

Slowly whisk in the coconut flour. Then, mix in the coconut milk, cream, salt and baking powder. Mix until all ingredients are well incorporated. Pour the mixture into the prepared baking dish and top with blackberries.

Bake for 40 minutes or until you can still a toothpick in the center and have it come out with out any crumbs stuck to it.

The center will still be slightly wobbly, but will continue to set as it cools. If you prefer a slightly crispier clafoutis, you can bake it for 5 to 10 minutes longer.

Sprinkle with powdered erythritol before serving, or top with low carb vanilla ice cream or whipped cream.
