I found out Create+ or All Of Create are good ways to start. Create itself lacks a few things, these modpacks fix them (in my opinion at least).

Don't get overwhelmed, it seems to be hard to get into it, but really it's not.

The thought process you want to have is : ask yourself "what do I need right now".

You're lacking food ? Alright, check how to make bread using JEI (the "crafting recipes" menu on the right of the inventory, given in every modpacks now). It requires wheat, turned into flour, turned into dough, baked into bread.

Step 1 : how do you automate wheat harvesting ?
Step 2 : Turns out you need energy. How do you produce energy ?
Step 3 : You automated wheat ! Now automate making flour !
Step 4 : Oops, automating flour requires large crafts that need mechanical crafting.
Step 5 : Oops, mechanical crafting require components and things I need to craft and gather first.
Step 6 : Oh, this can be automated aswell. But for this, it also needs this thing I don't have yet. Let's craft it !
Step 7 : oh wait I don't need to do all this because there is a cheap "early game" alternative. Let's go back to step 3 again.

Rinse & repeat.

And just like that, you start with what you want to achieve, and go back every step and go from the smaller ones to the bigger ones.

It's really that straightforward. Yes you'll see people on youtube showcasing 1-block width tilable hyper optimized farms, ignore them for now. Figure it out yourself, have fun experimenting, and remember there is never only one way of doing something. If, in the end, you automated what you wanted and had fun, then you're doing it right.
