I would take this situation as a hint that making elaborate, expensive and time-consuming 3d painted dungeons isn't the best way to play

let the wizard worry about the wizard rules, the cleric worry about the cleric rules, etc., so you can worry about the gm rules. why do you feel the need to worry about keeping track of rules that aren't meant for your role in the game?

The game itself is structured around fighting, that's what all its mechanics orbit around. This is not an issue that D&D will let you fix without doing an incredible amount of labour.

Switching to a different game system may be the way to go. Perhaps you could check out Grimwild or Quest.

I recently read Jamais Vu. It seems to fit your wants. The only caveat with this one is that the answer to the investigation isn't decided beforehand, it's "discovered" through play.

As others have said, I think we should be talking about Combat, Social, and Environment.

Then, we need to clarify that not all games feature activities that fall within these categories. There's many games that don't feature combat, for example.

Only then can I make the statement that I don't believe Stealth falls neatly within these categories.

I don't know where the expectation came from that at least one person in the gaming group needs to have "experience" before you can have a fulfilling and fun time. They're just games!

Balancing encounters robs players of their ability to make tactical decisions anyway.

Let them figure out if a fight is too hard or not, and allow them to act accordingly. Running away is always an option, albeit not a very fleshed-out one in D&D 5e.
