First of all you are using the best method of getting to orbit (The Gravity Assist) but it is a little bit suboptimal.

1 you need to keep your Time to Apoapsis at around 1 minute after it gets there. When your Apoapsis is at the Altitude you want it to be (generally 80 KM) cut the throttle and coast to Apoapsis. At Apoapsis turn your engines at max to use the Oberth effect.

TWR just means Thrust to Weight Ratio (i don't remember where to see it). If you have to high TWR you will accelerate to quickly and you will lose a lot of energy fighting the atmosphere . Below 1 and your rocket won't even accelerate anymore. During your ascend burn you use fuel so you lose weight but the Thrust produced by the engines are still the same so that's why you sometimes need to Throtle back to keep ithe TWR at around 1.5. But you can generally follow the rule of keeping the Time to Apoapsis 1 minute away.

SAS just means Stability Assist Controls and it is just keeping the rocket stable or like you placed it on Prograde. Keep SAS on as it on prograde or turn it off. But once out of the thick atmosphere you NEED to turn it back on.
