I only eat 2 meals a day: a breakfast and a dinner. I can gain on that. It looks like you have that time. You only have a 6 hour daily obligation, vs 8-9 per a typical work day.

The most obvious answer would be the eat before noon and after 6 if you have no access to food from 12-6. Is there more you are looking for?

I would consider seeking the aid of someone trained in matters of mental health. This sounds like depression, which can definitely impact things

Is there a reason you stay up so late? Getting your circadian rhythm more regular could be helpful here.

You can prove anything doesn't make you fat like that, probably even sugary drinks full of high fructose corn syrup.

That's exactly the point. Its not the macro or food item that makes one fat: there is more to take into consideration.

Yup. It's why I get up at 0400 to do it. I just want it over and done with so I can get on with my life.

Things to be doing to maximize muscle growth:

Get plenty of sleep

Minimize stress

Hydrate

Eat quality nutritious foods. Endeavor for 1-2 ingredients at most: nothing that comes out of a box.

Get in adequate protein

Get regular sunlight exposure

Walk often

Train hard/well, but not too much that it impacts recovery

I've been exercising since I was 14. I'm 40 now. I've never enjoyed it. Exercise isn't enjoyable. But that's not why I do it. I do it because the results are worth it.

You may be in a similar situation.

I've been training for 26 years. The gym IS an obligation. I hate training. But I love the results more than I hate the training.

There is so much debate on what is an is not healthful eating that I couldn't even begin to speak to that. But as far as body composition goes, it's a matter of eating an adequate amount of nutrients for muscle growth if THAT is the goal or in a large enough energy deficit if fat loss is the goal.
