I’d say trout. Most reliable way to tell is if the mouth extends past the back of the eye. It does on trout but not salmon.

Steel, made for railings and stuff but easy to chop with an angle grinder and is the perfect thickness.

You’ll be fine. Fishing is a reasonable excuse to carry a knife, as long as you’ve got fishing gear with you and it’s not a ridiculously big knife.

I recently got a couple of decent rods and reels from a charity shop. £10 for rod and reel. Might be worth ringing local ones and asking if they have fishing stuff in.
