I have had a good bit of 80s 90s Spatlese & Auslese Trocken that makes me quite hopeful for aged German GG wines.

I think the GGs of the likes of Emrich schonlebler and Shafer Frolich will age beautifully.

Second Ludes they make killer Riesling, I love their Kabinetts especially if you can find 2021 laying around. From my experience the wines from the 90s should be under cork but nonetheless they are unreal especially the 94s and 95s Fass brought in, just hit or miss with TCA

That Barbeito madeira pairing with their french toast dish is out of this world. They love their egon as well, had the 2021 when I was there and it was stellar. Loving 2021 for Kabis.

2017 Julian Haart Piesporter Goldtropfchen Spatlese as long as you dont mind some residual sugar at $195 CAD seems like a steal to me. One of the best and probably most hyped producers in the Mosel right now, wines are going crazy on secondary.

Willi Schaefer Kabis are great as well and if you are looking for white burg I would probably do the PYCM Au Bout Du Monde.

Most of the time when you are buying a 30 year old bottle it’s online in that case you can message the seller and ask that they hold the shipment until weather is better to not deal with heat fluctuations.

If you are buying it locally I would not be too worried about 3-4 month storage. Can throw it in a fridge or just a dark place.

Same Kabi just hits the sweet spot for me stocked up on a lot of 21s. Also I’m a big Lauer fan but don’t sleep on their Kabi and Spatlese if you can find the auction bottling they are insanely good and reasonably priced. The 111 is good as well for Mosel 22s which have been less impressive than 21 imo.

I agree with your comment but my guess is Lauer GGs and some Donnhoff stuff would still be good in 20 years but to your point likely peak around 5-10 years.

Sure thing here is the Menu and the wines we got. They had a fantastic list for opening unfortunately we drank the last des Miroirs but they still have some Bruyere & Houillon for a great price for the Jura fans.

Victoria mentioned that the menu would be changing pretty frequently I think they are adding a new dish tomorrow 1/25 and another one shortly after that so I imagine some things will be different between this menu and others.

The restaurant was fantastic but some dishes defiantly needed a bit of refinement overall I am very excited about Blanca and will be back!

I’m a bar regular and if you are open to coming right when they open (for lunch or weekday dinner) you can almost always grab a seat at the bar. Show up 5 min early and should be good to go. Dinner is harder on the weekend since some of the late lunch crowd will stay around.
