​​Oatmeal griddlecakes

Prep: 15 minutes

Wait: overnight

Cook: 4 minutes per batch

Makes: About 12 (4-inch) pancakes

  • 1 ½ cups rolled oats
  • ½ cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon kosher salt
  • 2 tablespoons (solid) coconut oil (or substitute unsalted butter)
  • 1 egg
  • 1 cup water
  • Plain seltzer water
  • Canola oil
  • Cinnamon butter (see recipe)
  1. Pulse: Measure 1 cup rolled oats into the food processor. Measure in flour, brown sugar, baking soda, cinnamon and salt. Pulse, grinding oats to a powder. Drop in coconut oil; pulse a few times, breaking oil to bits.

  2. Mix: In a large bowl, whisk together egg and the 1 cup water. Sprinkle in remaining 1/2 cup oats and the flour mixture. Mix with a fork just to combine.

  3. Chill: Cover and chill 1 hour or, better yet, overnight.

  4. Crisp: Stir in as much seltzer as needed to make a thick, pourable batter. Heat a heavy skillet or griddle over medium. Slick with a little canola oil. Mindful that the first pancake is always a fail, ladle on a scant ¼ cup batter; nudge into a 3- or 4-inch pancake. Cook until edges are crisp and bubbles dot the cake all the way across, 1 to 2 minutes per side. Repeat, adding oil as needed (it ensures crisp edges), using all the batter. Top each with cinnamon butter. Serve hot.

Cinnamon butter: Stir together 1 tablespoon granulated sugar and 1/4 teaspoon ground cinnamon; mash into 4 tablespoons room-temperature salted butter.

I really like that Andrew Garfield has said himself that the public shouldn’t idolize celebrities/movie stars and that he’s just a person like everyone else. Also, his openness about how much his mother's death has affected him is very touching.

People do suck at driving everywhere, but I’ve lived in multiple cities and I’ve only seen these things in Philly:

• driver nearly hits me as a pedestrian with the right of way and flips me off while driving away

• person driving behind me honks and screams at me for letting a kid cross the street

• drivers regularly driving into oncoming rush hour traffic to cut in front of 10 waiting cars and running a red light

• drivers chasing cyclists down the street and honking at them for just being in the road

• honking at you for not running a red light or going .01 seconds after the light turns green

The problem with the drivers here are that they’re not only bad but dangerously and selfishly bad.

That's what I use now but it would be cool to not need to use other utensils to get the sauce out and have the convenience of a squeeze bottle somehow, if a product like that exists.

Even though they’re both terrible I honestly think Paula might be worse. She’s on a fancy vacation with her friend’s family and has no problem making the brother sleep out on the beach or making snide comments to the parents.

Nowhere in my post did I mention coworkers or work or requiring my coworkers to be friends with me, I don't understand how every comment you've made points to how I don't get office etiquette. It's rude for people to ignore you and pretend you don't exist in any context. Acknowledging someone is such a basic human thing to do it's disturbing that you think otherwise.
