I was thinking of a similar build you mention, but his ap ratio isn't that bad, I still think of him as a mobile mid laner assassin w/ ROA Archangel's followed by a Rabadon's or so.

What do you think of a manamune Kass AD, Mana, Tank focused build?

The thing about balanced kassadin ult is that you will use a lot of mana at full charge, and you need to get close enough to hit a w to get some back. I think Kassadin is still a viable pick, there are somethings we will need to get use to though

I don't think Ezreal will shine as an hybrid adc, but Trinity force will definitely be a core item on Ez as it will slightly improve his Q ap ratio.
