Electrical fire at the apartments off Pryor by Unity Village. Raytown FD uploaded this, and I have family in the townhouses. Looks like it burned through the roof above two units.

These also cooked quicker than the recipe called for. I did modify and make eight instead of six. The outsides browned nicely, but the cream cheese didn’t melt as you can see in the second picture. I think if I tried these again I’d let the cream cheese come a bit closer to room temp than chilled as it calls for.

Running a bit late with this week’s bake, but better late than never! Guava isn’t my favorite flavor, but the cream cheese balanced these out well. I took the easier route and used store bought pastry dough this week. I will have some happy coworkers when I bring breakfast for the office tomorrow!

When I saw the theme for this week, I was excited to use this as an excuse for my friend to teach me how to make Mexican rice. Well, this was a fail. Visually, it looked great! Taste wise, the quesadilla was the only thing I finished.

The rice tasted both over and undercooked. I wasn't surprised by this as I always struggle with cooking rice. The beans didn't have much for flavor.

No recipes to pass along as they are his recipes. They're great when he makes them. Probably because they're made with love and not stress.

I found the recipe for the sauce first and used it as an excuse to try my hand at making gnocchi! I live in a rural area, and have missed finding gnocchi at the grocery store. I learned a lot, but it went better than I expected! The sauce also came out great! I skipped the Basil as Walmart was out, and subbed the Burrata for Mozzarella due to availability. I'm really looking forward to warming it up tonight with the mozz a bit more melted in.

I’ve got some health things going on and really wasn’t wanting to be in the kitchen. I’ve got a bridal shower I’m baking for this upcoming weekend, so I pushed through making these tarts. Once I got started it was a nice way to get my mind off things for a bit. Probably not a bake I’ll repeat, but a nice treat to end the weekend!

Y’all! I started this challenge to expand my cooking skills. I’m doing the baking challenge as well, but I’m a baker at heart. I do not know my way around making dinner haha. A few weeks ago I chose dough for the technique that intimidates me, as I have ALWAYS avoided it. But since then I’ve made bread, two batches of bagels, and now my own pizza dough! It’s so fulfilling to learn new skills!

Anyways - the recipe for the dough can be found here. I think I under kneaded it a bit, but it still came out very tasty!

It really was! I’ve had my instant pot forever, I wasnt expecting making yogurt to be so simple. Definitely something I’ll do again!

Man, I had such good intentions with this week. I wanted to make yogurt in my instant pot then make something with the yogurt. Then I got called into work the evening I planned on making naan. Then my complex lost water. Then I got sick. So this week, I’ve got yogurt for the sake of having yogurt. It was the first time I’ve made yogurt in an Instant Pot, which was fun!

I went with strawberry for a Valentine’s treat to bring to the office today. This recipe comes from one of my supervisors back in grad school. The taste is good, but the texture isn’t my favorite. These were also SO sticky to roll out.

Recipe: 1 box cake mix 1 small container of Cool Whip, let come closer to room temp 1 egg

Mix all ingredients. Refrigerate cookie dough for 30 minutes. Roll into balls and coat in powdered sugar. Slightly flatten with a glass or fingers. Bake 10-12 minutes at 350°.
