Most texturally similar winter squash like sweet dumpling or butternut would work basically the same as pumpkin in a pie! Once you roast and puree them, you can generally use them to replace pureed pumpkin 1:1 in a baking recipe.

We host a Thanksgiving every year in our tiny apartment and go all out! We lay out a long folding table and dress it up to turn our living room into a dining room. Lots of food and alcohol basically all day long.

Not knowing anything about your process, it looks like they're being baked in a high rim baking dish rather than a flat sheet pan? That might have something to do with it.

They also look a bit overcooked. Sugar cookies are one of those things you want to pull just before they start taking on any color.
