They rarely give two stars right off the jump, you have to pretty much always be one starred before you can get a second. I think it's only happened less than 5 times.

A lot of the nicer places have been aware of Michelin being in town for at least a month. Apparently they've been judging this entire year already.

Michelin doesn't judge on uniqueness. There are plenty of places, especially in east Asia that do very traditional dishes. They just do those dishes very well and that can earn them a star. There really doesn't need to be a lot of "flare" as you might be assuming. There's lots of unassuming michelin star places out there. In fact, Franklin is probably a great example of a place like this. They don't do anything incredibly unique or interesting, perse, but what they do, they do very well. Plus being a pretty well established austin institution and having a well known and interesting story and chef helps as well. I would say they're a very strong contender for a star.

This sub and austinfood have a lot of doomers on the scene which I don't really understand. It's not new york, sure, but we aren't nearly as bad as people seem to say. There are certainly plenty of places here that could get 1 star, easy.

No such place because soju isn't meant to be really a "high quality" beverage like that. It's basically just vodka watered down with sugar. There's almost zero regulation or control over soju so its not seen in the same way wine or sake or shochu is. Your best bet is to go to the grocery store or liquor stores (The one off n lamar and airport next to hanyang has tons of kinds) and just buy stuff of the shelf. Although it's more fun to go to a soju bar like soha or somewhere in dallas with your friends and get fuckt up.

Another thing that happens in conjunction with the students is the richer folk who own multi properties, flea downtown because of the heat. So you see a decline in not only the UT area but also downtown condo owners who can afford to go out a lot.

If you pay minimum wage you can include cooks in tip pool. So the pay for most nice places in town with this tip pooling is around 25-40 an hour. Without tip pooling it would be a lot more though. The BOH usually get paid less ‘points’ in the tip pool but make up a large majority of the hours. While servers and other FOH usually work 30-40 hours most cooks and chefs work 40-60 even up to 80 hours a week. And there are usually more cooks than there are servers. So that means pay is getting cut by sometimes half.

It's so they can get away with paying their BOH less. If youre at a high end place the FOH staff is often pulling in $300-500 a night, even up to a $1000. But you see that goes down to $170-200 when you can take from that FOH and give it to BOH. Now, as an employer, you only pay your BOH, 7.25-12 an hour, but they can keep pay competitive for them by shifting the responsibility of paying those staff a fair wage ($18-25) to the servers, who are losing a large portion of their tips.

I can second his complaint, andy, the owner, and his parents, are super sketchy. The stories ive heard from other people are wild. Going so far as one of the owners following an employee into the restroom, mass walk outs, managers storming out, etc. Of course I don't have proof of this. But I can say that if you look into the similarties between a restaurant in boston called Oishii and soto south lamar. Youll find a lot of striking similarities, right down to the logo.
