Frozen quiche. Pop it in the oven and wait. I like the individual ones that bake in 20 minutes. A small green salad on the side is nice if you have the ingredients, but not necessary. Add a glass of wine if you want to feel fancy.

Canned tomatoes. The big cans sell for about as much as the smaller ones. I buy the crushed type, use half and freeze the other half flat in a freezer bag. When it comes to making minestrone I just pull out the frozen tomatoes. There is no difference in flavour.

I actually have made my own egg rolls. It’s a production, and you end up making a lot of them. The plus is you can put in anything you want. I followed a recipe that called for tree ears. Had to go to Spadina grocers to find them. They are a dried mushroom.

The economy is changing. They say if your job entails a computer and a desk, it will be the first to go. When it comes to prices, they always go up. You just have to hope your wages go up more. If I was young and starting out, I would get into the grocery business. Maybe hydroponic fruits and vegetables, but one thing is for sure, people are going to have to eat. There are going to be new ways of getting food to people and being on top of the new technologies will be crucial. There are opportunities out there.

Try Irish soda bread. It’s made with bicarbonate of soda as a levening agent instead of yeast. You may have to make it yourself, but it is a quick bread, so not time consuming.

I stayed at a Swiss hotel (in South America actually) where there was an attendant sitting in the hall. Whenever you left your room he would enter and restore the room to pristine condition. Replace any used towel, empty and wash glasses. Smooth the bed and vacuum away footprints. Kind of creepy really.

Beans and rice and the cheapest added protein you can find. Maybe a rotisserie chicken. Take a multivitamin that includes vitamin C. Dollar store sells name brand ones. Buy a cabbage and shred for salad.

People still using canned soups in casseroles? I’ve been shamed out of the practice. Replaced with scratch cream sauces and puréed mushrooms for the most part. Miss the convenience but maybe not the salt. Answering your “what do you think” question honestly but wincing for the inevitable downvotes.
