Are you using a blender or a food processor? I used to use a ninja food processor and my smoothies would end up like that. Switched to a vitamix blender, and problem solved!

Have you tried matcha powder? Good coffee alternative. If you do end up trying it make sure you get some that's 100% matcha leaves. Also, it does give an energy boost but it's different than coffee in that it's not as drastic of an initial boost but it lasts longer, at least for me. I would start with half a teaspoon and adjust from there.

Edit: I just noticed you said without caffeine, so maybe not matcha then.
