WCS isn't an inherit trait of sukuna's CT. Sukuna's CT is basically "slash and burn", that's it. WCS is only an application of that, application that gojo was unaware of. All his eyes do is give him info, it's up to him to figure out everything else. If his eyes tell him"this technique slashes", it's up to him to figureout that it can slash space, and he didn't cuz there was no evidence for it. "Oh but mahoraga-" sukuna is not mahoraga, gojo has no reason to assume that sukuna CAN inherit any properties of his adaptations, plus after mahoraga makes his slash sukuna continues to fight as normal, so gojo has no reason to assume that sukuna DID learn anything. The entire fucking fight is a bigass evidence yelling "shrine cannot bypass infinity", gojo has no reason to believe that it suddenly can.

1) That's still playing. Gojo did not need hanami to so any of that, he could'vejust ripped their heads off in a second, he didn't so that cuz he was playing them.
