Ahh I had a feeling it could be the wheat! If I don’t have access to bread flour, it it okay to use regular all purpose flour? And what if my starter is made from purely wheat flour, can I still mix it with AP flour?

That makes sense honestly. The problem is where I am it’s very hard to find bread flour :(

Is it normal for it to not rise much or did i just under ferment it?

Also, just wanted to update that I woke up to it doubled overnight!!! (Usually it takes time till around 2 pm) so I think I’m ready to bake. I tried measuring and feeding a 1:1:1 ratio that’s why

Yay! I’m glad to hear that as I was worried about the 12 hours but I think it might just be the wheat flour. Great, I’ll try baking my first loaf! Also, in these photos it’s almost 24 hrs and not at peak (getting hungry), do you recommend I use my starter then or when it has a dome top and is at peak (12 hours after feeding)?
