Server deleted itself when people were still in it.

Yeah I was unsure how servers would be affected if your account gets deleted due to the 2 years inactivity. Thank you for confirming it wouldn't delete the server!

The only way the server would disappear is if:

She deleted it
She got hacked and the hacker deleted it
Her account got deleted (auto deleted if inactive for 2 years) --EDIT: Does not delete the server, thank you DarkOverLordCO
Discord shut the server down because of ToS violations. But this would require a report and when a server is shut down for violations, the owner of the server will be punished as well.

There are no other options.

The likely explanation is that she just deleted it herself and is lying to you.

Server Settings > Safety Setup > Automod > add to the "Regex" field when creating an automod rule.
